Savory Turkey and Sweet Potato Hash

Savory is the PERFECT way to describe this recipe! I am so excited to share this one with yall and my review!

IMG_2678When i sat down to make my meal plan for week 1 I flipped through the guide and picked out a couple of recipes that interested me and I decided to try out this Savory Turkey and Sweet Potato Hash out first! We had just gotten back from vacation the day before and I had NO desire to stand at the stove for forever cooking and this looked easy and quick. My hubby was less than enthusiastic and was basically gonna try it just so that he wouldn’t hurt my feeling while i was still exhausted from vacation! LOL! To quote him “hum I’m not sure how that’s gonna be with sweet potatoes in it…..”

 

So I pulled out my trusty cast iron skillet and went to town!

Savory Turkey and Sweet Potato Hash

  • 2 tsp Olive Oil
  • 1 medium Onion, chopped
  • 1 medium Green Bell Pepper chopped
  • 2 medium Sweet Potatoes peeled and chopped
  • 1 lb raw ground 93% lean Turkey Breast
  • 2 cloves finely chopped Garlic
  • 1 1/2 tsp chopped fresh Thyme or 1/2 tsp dried thyme
  • salt and pepper to taste

Heat oil in medium skillet over medium-high heat. Add onion, bell pepper and sweet potatoes; coos, stirring, frequently for 8 to 10 minutes or until onions is translucent and sweet potato is tender-crisp. Add turkey; cook stirring frequently, for 5 to 10 minutes or until turkey is cooked through and sweet potato is soft. Add garlic and thyme, salt and pepper to taste. Stir well.

Makes 4 servings, about 3/4 cup each

WE LOVED THIS RECIPE!!! My husband took one bite and “WOW, this is really good!” was his response! It was sweet it was comforting is was YUMMY!!

This recipe will definitely be making it into our rotation. 

You could easily double the recipe and make extra for the week for lunch! add in a little side salad and you will be good to go and full!!
