I have really been working on side dishes that cover a lot of VEGGIE ground for dinners. Charleston will eat anything that we give her but Aiden is a little more pick and really struggles with textures, which makes him like me!
The recipe from last week the BOSS squash is amazing and although it took a day to warm up, he finally came around and ate a really good serving. This week’s recipe also involves BACON! Again I say YOU’RE WELCOME!!
Recently my mom and I have been obsessed with cauliflower. Which is totally weird! We keep finding things we want to do with cauliflower. Mashed potatoes, loaded mashed potatoes and just yesterday she came to me and said that wanted to make a cauliflower grilled cheese….. hum…. not sure about that one but I will certainly try it if she cooks it!
About 2 weeks ago we made our first batch of Cauliflower mashed potatoes and they were so simple to make! Charleston and I loved them, Russell said they were good and Aiden wouldn’t touch them with a 10 ft pole! But he won’t touch mash potatoes either.
Cauliflower Mash Potatoes
- head of cauliflower
- 1/4 milk (maybe less depending on the size of the cauliflower)
- 1/4 sour cream (again depends)
- salt and pepper
Trim the stalk off and cut it down into florets and then just pop it into a pot with the boiling water and cook until they are tender when you poke them with a fork. Drain the water and add the cauliflower back to the pot. Easy Peasy!! No peeling and chopping, once you cut out the stalk the florets mainly fall apart. Add all the ingredients and then with a mixer or an immersion blender, blend to the desired consistency.
Now for the LOADED part…ooOOOOoo AAHHhhhh
While the cauliflower is cooking you want to heat a skillet on medium to medium high heat and add the turkey bacon. Check out Summer Squash BOSS style to see how i keep my bacon for cooking like this! Once the bacon starts to cook add a thinly sliced onion and add about a TBSP of oil to the pan. Cook until the onions are done.
Scoop of “mashed potatoes” and then a scoop of bacon and onions then for the last pop of awesomeness about 1 TBSP of cheddar cheese on top!!!!!! BOOM!
Amazing and I just might have added a little BBQ sauce to it too and wow that will hurt cha!!
