So other than heat the other thing that the summer brings us here in good ole GA is fresh garden veggies! And what seems like a blessing in the beginning becomes something that we have coming out of our ears. Its still a blessing but now we are trying to spread the love! Haha!
Its everywhere! Squash, cucumbers, tomatoes, bell peppers. Yummy Yummy Yummy! There is nothing better than a homegrown tomato sliced with a little salt and pepper on it!!!
So summer squash and zucchini. After you make a casserole, grill it, saute is with garlic and salt…..what in the hey do you do with the rest of it? I mean what else is there left to do with ALL of it! Ill tell ya whatcha do with it and it involved BACON! TURKEY BACON!
But first a Kitchen Tip: Keep your bacon frozen. For the recipes that only use small amounts of bacon keep a pack of bacon in the freezer just for this situation! Turn the pack of bacon long ways and slice half inch strips across the slices of bacon. This way 1. you don’t have to do a lot of chopping 2. it cooks faster 3. the pack doesn’t go to waste!! Seal it in a freezer bag and pop it back in the freezer.
We are gonna call this dish BOSS! because is it gonna jazz up your dinner like a….. you guessed it BOSS!!! Bason Onion Summer Squash
- 2 half inch strips of bacon
- 1 onion cut into slivers
- 2 summer squash sliced into thin rounds
- 2 zucchini sliced into thin rounds (or 4 summer squash)
- garlic powder
- salt and
- 2 TBSP pure maple syrup
In a hot skillet sprayed with cooking spray add the bacon and let it cook a minute or two and then add the onion and let it start to get tender before adding the rest of the veggies. Season with garlic powder and salt and let the veggie finish cooking to the desired tenderness. Then add the maple syrup and mix well. DONE!!
You can use honey too but my 10 month old love these veggies and I didnt know it cooked honey was different that raw honey so I took the guess work out all together! My 3 year old love the squash too!! It was a full family win and now a staple in the house. The portion fix exchanges will depend on what you add and the serving size you use. Fill a green container for veggies and a tsp for the syrup. The bacon is not really enough to measure.
