Freezer Meal Workshop

I know that the theme of GRAB AND GO is always an underlying theme in my life but it is truly necessary for my success! Being able to cook something one time and use it to pack my food work for a week or two makes things much much easier. With these burritos I can grab it out of the freezer, toss it in my lunch box and then when I get to work heat it up and have a good nutritious meal quickly. Another reason this is great is that I didn’t have to cook at 5 in the morning!

Breakfast burrito are very easy to customize. You can add any veggies, you can add cheese or no cheese, you can add whatever protein you want!

With the ones that I made for this recipe I used onions, mushrooms and bell peppers. For protein I used eggs and turkey sausage. For the wrap I used Active Fit wraps from, you guessed it Aldi.

Breakfast burrito

  • preferred veggies

  • cheddar cheese

  • preferred protein

  • low cal. healthy wrap

I sautéed a chopped onion, bell pepper and 1/2 cup of mushrooms. Then I sliced up 3 turkey sausage links and scrambled 6 eggs.

My sweet Mattie girl even hung out with my while i cooked. She loves being in the kitchen with me.

Then i put my veggie, protein all in separate bowls to make my assembly like a little easier

Layer burrito with protein (1 egg, 1/2 sausage link) veggies (i just divided it up evenly into 6 portions) 1 Tbsp cheese. When done to your best Moe’s burrito engineer impression and roll that bad boy. Wrap them in plastic wrap.

For the last part. Lay the burritos on a cookie sheet or flat surface and freeze. Label a freezer bad with the portion swaps: 1 red, 1 green, 1/4 blue. When they are completely frozen place them in a gallon ziploc bad.  If you add jarred salsa then that will count as part of a purple.

I hope that yall enjoy these, i know i sure did, as i was running out the door heading off to work. Let me know what yall think!
