It is a great movie about two people who find each other quite by accident and to spite themselves cannot get out of their own way to be together…. I have this similar relationship with carbs. We love each other but we just cant get it together! lol!
Ok, but for real, one thing that you need in your breakfast recipe line up is a good waffle recipe. The bad this is that once you make the decision to become a more healthier you, you tend to have to find a new acceptable recipe. Have no fear!!! Ashley is here! These waffles are dairy free, gluten free and 21 Day Fix approved. (Oooooo AAAAaaa) They are also kid approved, which is the true test!! They are also quite filling! I topped mine with some pure maple syrup and they were amazing. The waffles are not very sweet by themselves but the addition of the syrup makes all the difference. I let my waffles sit for a minute to let the syrup soak in and it was literally the best thing EVER! Other ideas for toppings: chocolate chips, blueberries, strawberries, peanut butter! yum yum yum!
If you have never cooked or baked with coconut flour, it is a little different than regular flour. Coconut flour soaks up a lot of water so when you go to start making the batter you might think that there is too much liquid, finish making it and double check right before you go to pour the batter into the waffle iron.
21 Day Fix approved Waffles
1/4 coconut flour
1/4 t baking soda
1 T cinamon
3/4 cup egg whites or about 3 eggs
1/2 cup almond milk
1 t vanilla
Mix ingredients with blender, fill hot greased waffle iron about 3/4 full, flip, EAT!!! You can top these with fruit, peanut butter, pure maple syrup, chocolate chips really anything that you want! If you are 21 DF inclined: 1/2 red and 1/2 blue
** if you blend the batter then let it sit about 1 to 2 minutes to thicken up!**
