Before we get started with the recipes I wanted to tell you about a FREEZER PREP WORKSHOP that im hosting on AUGUST 8th!! It will be a week long and we will meet in a closed Facebook Group and im this group I will be giving you different freezer friendly recipes and different techniques for utilizing your freezer to get you prepped and ready to go for meal time! Utilizing your freezer will save you TIME, ENERGY and MONEY!!!! I will provide you with a meal plan and a grocery list and we will even discuss an efficient strategy for completing the meals!!

I hope that everyone enjoyed the first installment of Clean Eating in a Flash and Im glad that yall are back this week. I have 3 new recipes for you another breakfast, lunch and dinner combination. Two of the recipes are already in my normal rotation and one is brand new to me and my family and I cant wait to see what they think!
Forethought and preparation is key to a healthy diet. Not only does it help to keep your house stocked with healthy options there is also an art to fruit and produce. Knowing what you want to cook, what you need and when you are going to cook it is something that over time will become more comfortable. For example if you buy fresh mushrooms and you wait until the end of the week to use them you risk the chance that there are gross ones at the bottom of the sealed container icking up your well intended produce! I learn and lean this lesson over and over! For instance I bought a pineapple and it wasn’t quite right so i watched it….and watched it…and watched it…and crap its bad! Recently, again, same thing with a cantaloupe!
I cant stand throwing out food! In fact I will eat leftover for a week depending on what it is! My mom same way! My husband has a very strict 2 day rule and whatever is left gets chunked. Food waste drives me crazy and that is something that Im working on. With it only being me and Aiden that i have to cook a dinner for some nights that gets tricky. Having stuff that i can cook that I can adapt and he will eat is really helping out. I also try to get him to eat at least parts of what I eat like for the burrito he will eat eggs and cheese and toast, or the spinach saute he will eat the tomatoes with a little salt on them.
It’s all about finding what works for you and your family as you introduce this new way of eating to them!
Lets get to it! 1. Breakfast burrito which seems like it takes a long time but getting the pan hot usually takes the most time! We will also make a 2. Homemade Salsa too. 3. Turkey BLT: this one is the new one for us and Im eager to try it out! 4. Spinach and protein saute: this one is my own creation which is the excuse for the name. It doesn’t sound very fancy to me but it is really good.
Breakfast Burrito
Ingredients:
- 2 eggs
- 1/2 bell pepper (diced)
- 1/2 cup mushrooms (diced)
- 1 TBSP cheddar cheese
- Flatout wrap
Directions: In a hot skillet saute veggies to desired doneness. In a small bowl whisk eggs and add to pan, scrambling the eggs. When done fill the flatout wrap top with cheddar cheese and salsa, Homemade salsa counts as more green and jarred salsa would count as purple
Serves: 1 21 day fix exchanges 1 yellow, 1 red, 1 green, 1/4 blue
Time: about 6 to 10 minutes (i cook it while cooking breakfast for the family)
Turkey BLT’s
Ingredients:
- bread (toasted)
- turkey bacon (cooked)
- sliced tomato
- provolone cheese slices
- plain Greek yogurt
- salt and pepper to taste
Assemble sandwich: toast, cheese, bacon 4 pieces, lettuce, smear of yogurt, tomato, salt and pepper to taste. Easy Peasy!
Serving: 1 sandwich 21 DF exchanges 2 yellow, 1 green, 1 red
Time: with cooking the bacon about 20 mins (we cooked the whole pack so that we could make more sandwiches quicker later in the week.
Review: Two words! YUM YUM! These were great!! Russell liked them too! Aiden isn’t a big turkey bacon kid so he didn’t try them. I will definitely be doing these again!
Spinach saute (i know real creative)
Ingredients:
- desired protein; (Im using 1 link of Kirkwood Chicken Sausage)
- spinach about 1 cup
- 1/2 cup cherry tomatoes
- 1/2 cup fresh mushrooms
- garlic powder
- onion powder
- Marsala wine
Directions: In hot skillet spray with cooking spray, or sprinkle with a little EVOO (channeling my inner Rachael Ray), slice sausage in brown it in the skillet. Remove and add veggies. I like to put the mushrooms and the tomatoes first and then the spinach on top. To taste add garlic powder and onion powder. Once everything begins to cook down some add about 1 Tbps of Marsala wine. Enjoy
Servings: makes 1 , my 21 DF exchanges 1 red, 2 or 3 greens depending on the amount of spinach you use!
Time: This only takes about 5 to 7 mins
Review: This, like i said, is a personal creation! I really like this for dinner because its an EASY was to sneak in extra veggies! Aiden love the tomatoes but NOT cooked. Again a texture thing and Russell likes it but picks out the tomatoes because he doesnt like them. Every body enjoys some variation.
