21 Day Fix pancake challenge

If your house is anything like ours pancakes are a breakfast STAPLE!! My 3 year old likes, like his mommy, them with chocolate chips and my 8 month old, well she will take them however. She just enjoys being able to be a big her and feed herself!

When I made the decision to get healthy there are certain food that I knew that we were going to have to adjust so that we could still enjoy them. Pancakes came first! After a few mornings of Mommy turning down turning down nice, warm, brown, wonderfully smelling pancakes, enough was enough. I’m currently in the second 30 days of and although we don’t use the 21 Day fix portion containers the portions are similar enough that if I exchange them it works out fine. Here is a refresher of the 21 day fix containers and what serving the represent

I started searching for 21 DF pancake recipes and I found two that I wanted to try.

Recipe #1

21 Day Fix Pancake

  • 2 eggs
  • 1 banana
  • 3/4 cup of oats
  • 1/2 cup unsweetened apple sauce
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • Makes 6 pancakes, serving size 3 pancakes, exchanges for 1/4 yellow 1/2 red 1 purple


1. Collected ingredients 2. Loaded them in the blender 3. blended about 30 seconds or until smooth 4. heat lightly greased skillet cook until golden brown, i use a little less that a 1/4 cup measure to portion batter

Recipe #2

21 Day Fix Pancake

  • 1 cup egg whites
  • 1 cup fat free cottage cheese
  • 1 cup whole grain oats
  • 1 TBSP cinnamon
  • 1 tsp vanilla extract
  • 1 tsp of stevia or raw sugar
  • makes 10 pancakes, serving size 3, exchanges for 1.5 red 1 yellow

RESULTS (drum roll please…….)

They were both pretty good. Im not a huge fan of banana or cottage cheese so I had my fingers crossed for both but they each had their own appeal. The one with banana (recipe #1) tasted like banana nut bread, i would suggest making sure these are cooked really we and not quite at thick as you would make a normal pancake. IMG_7118

The one with cottage cheese (recipe #2) was good also. I was worried about the curds (ugh) and the consistency of the batter but once blended it was nice and smooth.


AND THE AWARD GOES TO………. Recipe #2!!!! It tasted the most like a regular pancake. #2 would be great on its own or add some blue berries or any other fruit topping…or chocolate chips….
